1/4 cup shortening
1/4 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 tbsp instant coffee
1 egg
1 tsp vanilla extract
1 cup all purpose flour
1 cup quick cooking oats
1 tsp baking soda
1 tsp ground cinnamon
1/2 cup chocolate chips
1/2 chopped walnuts
In a large mixing bowl, cream shortening, butter, sugars and instant coffee. Beat in the egg and vanilla. Add flour, oats, baking soda, cinnamon. Stir, add chocolate chips and walnuts, stir some more. Roll into 1 inch balls, and place 2 in. apart on greased cookie sheet. Bake at 350 degrees for 10-12 minutes.
Cool for 5 minutes. Then eat!
