Chicken Roll-ups with potatoes and bacon...
Ingredients:
4-6 potatoes or more depending on how many people you are serving
Chicken fillets
Ham slices
Cheese slices – gouda/havarti… your choice
1 can cream of mushroom soup
1 can cream of chicken soup
4 tbsp sour cream
½ cup of chicken broth
Black pepper
1/2 cup grated cheese (aged white cheddar is a nice choice)
Directions:
Preheat your oven to 375
Peel the potatoes and cut them in thin slices.
Parboil them until fork tender in lightly salted water.
Cut each fillet into 2-3 strips.
Lightly butter an oven dish.
Layout side by side two slices of bacon. Lay a slice of ham on top of the bacon and then lay a piece of chicken across the ham. Put a whole slice or half a slice of cheese on top of the chicken. Roll up and lay in large oven dish. Continue rolling up the rest….
Mix cream of mushroom soup, chicken soup, sour cream and broth together.
Ladle about 2/3 of the soup mixture over the chicken rolls. Make sure to also get some in between the rolls. Layer the potato slices on top of the rolls and divide the rest of the soup mix over them. Sprinkle each layer with pepper.
Finish with 1/2 cup of grated cheese.
You can pop it in a hot oven for 50 minutes now (until the top is golden brown and the rest is bubbly hot) but you can also cover the dish with foil and put it in your fridge.
