Plum cake was a family favorite growing up! My Mom is Austrian and Dad is Hungarian so there was always something good comin from the oven. I especially love this recipe since the plums are simmered with lemon juice and sugar which makes them sweet and tender. Before my Mom passed away she canned cherries and I still have a jar in my pantry. So I added cherries to this recipe as well.

Ingredients
Cake
1 cup (200 grams) plums, pits removed and sliced into small wedges
1 tsp lemon juice
1/2 cup (100 grams) granulated sugar
1/2 cup (50 grams) unsalted butter
1 egg
11/4 cups (150 grams) all-purpose flour
Streusel topping
1/4 cup (55 grams) brown sugar
1/4 cup (50 grams) granulated sugar
2/3 cup (85 grams) all-purpose flour
1/4 cup (60 grams) unsalted butter, chilled and cut into small cubes
Directions
Preheat the oven to 350°F (180°C). Butter the bottom and sides of a 20cm/8 inch square cake pan.
In small saucepan, add the plums and lemon juice. Heat on low for 5 minutes or until soft. Add the 1/4 cup (50 grams)sugar to the pan and cook gently until dissolved. Simmer for 3-4 minutes until very thick, stirring occasionally.
Beat the butter and 1/4 cup (50 grams) of sugar together in a bowl until light and fluffy. Add the egg, then mix in the flour to make a soft dough. Press the mixture into the bottom of the prepared cake pan. Bake for 15 minutes. Remove from oven and spoon the cooked plums over the base.
Meanwhile, to make the topping, mix the sugars and flour together in a small bowl. Add the butter cubes and mix until coarse crumbs form. Add topping mixture over the plums.
Return the pan to the oven and bake for another 30 minutes, or until topping is lightly browned. Allow to cool before serving.
