Split Pea Soup with Ham

Split pea soup is one of my all-time favorites comfort foods. I think this is because of the creamy texture (not thick and chunky though) and flavorful fresh diced ingredients. I love it served piping hot with a slice of whole grain bread. It's one of my quick & easy meals.
































Ingredients:
1 small onion chopped
1 large carrot chopped
2 celery stalks chopped
olive oil
1 cup chopped ham and ham bone
6-8 cups chicken broth
1 cup dried split peas
1 tbsp chopped thyme
season with salt and pepper

Prep:
Cook onion, carrot, celery in olive oil in large saucepan until until half tender. Add broth, ham and bone, dried split peas, thyme, salt and pepper. Boil first and then simmer until peas are tender. Approx. 1/12 hours. Remove ham hock; pull off and shred meat. Top with croutons.

  1. YUMMY!! That soup doesn't look anything like the split pea soup I've tried! Isn't it nice that you can buy all the peas already split? That would be a big job, wouldn't it? ;o)
