Black Bean Soup

This soup is delish! Perfect any time of the year!





















Ingredients:
2 tbsp olive oil
1 medium yellow onions, diced
1 red or green or yellow (lol) bell pepper, diced
1 small sweet potato ( I prebake mine ) (If not adding a prebaked potato then boiling time will take longer)
3 cups vegetable broth
2 cups water
1 cup frozen or canned corn kernels
1 can black beans, drained and rinsed

Salt & pepper, to taste
Squeeze of half a lime
Shredded cheese
Sour cream

Preparation:
Heat olive oil in a large pot over medium heat. Add onions, and peppers, saute until soft, about 8 minutes.
Add broth, water, and sweet potato. Bring to a boil, and reduce heat to simmer, about 10 minutes.
Next, add canned corn and beans. 
Season with salt and pepper. Simmer for 20 minutes.

Using an immersion blender, blend mixture until smooth or desired consistency (or not!).  Add lime juice, and more salt and pepper, to taste. Garnish with sour cream and shredded cheese.


Makes 4 servings.
