Severed Finger Cookies

Oh my! Not only do these taste super yummy but they look so cooooooll!! Real like!!

















Here's what you'll need...

1 cup butter at room temperature
1 cup powdered/icing sugar
1 egg
1 tsp. vanilla extract
21/2 cups flour
1 tsp. baking powder
1/2 cup sliced almonds
Raspberry jam

Preheat oven to 350
In a large bowl, beat the butter until creamy. Mix in the sugar, egg and vanilla, then mix in the flour, baking powder. Cover the dough with plastic wrap and refridgerate for 30 minutes. (I didn't do this step) Time is of essence now and then! lol

Okay now the messy and fun part! Using your hands, roll a tbsp. of dough into a finger shape. Place the fingers about 2 inches apart on an ungreased cookie sheet. Stick a sliced almond on 1 end of each for the fingernails. Use a table knife to make three crosswise knuckle marks in the middle of each cookie. Bake until lightly golden, 20-25 mins.

Meanwhile, in a small saucepan cook the jam over low heat until it reaches saucy consistency. Remove from heat and pour into a small bowl; dip the "severed finger" end of each cookie into the sauce.

Makes... lots!

Pumpkin Muffins

































Easy Peasy recipe! I used a box of Yellow cake mix (or Vanilla) some canned pumpkin, and pumpkin pie spice. Simple and delicious! Hubby is happy!
Mix cake mix with the canned pumpkin and spice. Batter will be slightly thick.
Spoon into muffin tins. When cool dust with powdered sugar.
Bake at 350 degrees for 20-25 minutes.

I didn't frost them but here is a great frosting recipe!
Pumpkin Cream Cheese Frosting:

8 oz Philadelphia  (do not use fat free)
1/2 cup pureed pumpkin (canned is fine)
1 tsp vanilla extract
1 tsp cinnamon
1 tsp pumpkin pie spice
5 tbsp packed brown sugar
Combine the cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice and brown sugar until smooth. You can use a spatula to ice the muffins/cupcakes or pipe them which may require making more frosting.
